  1. Sieve flour, baking soda, and salt together into a mixing bowl.
  2. Cut the butter into small pieces and rub into the mix until it resembles breadcrumbs. Use a fork for tidiness or fingers for ease.
  3. Stir in sugar, bananas, and egg.
  4. Remove the blade from the breadmaker and line with wax or parchment paper.
  5. Scoop the mix into the pan, ensuring that it remains within the paper lining.
  6. Select ‘bake only’ and set to 45 minutes’ baking time, then press start.
  7. After the timer sounds, test with a skewer for doneness. If necessary, bake for another 3-5 minutes, keeping in mind that slight stickiness ill cook through during the cool-off period.
  8. Remove the baking pan from the breadmaker and allow to stand 5-10 minutes before removing the bread from the pan and allowing to cool.

Glaze with apricot jam with desired, with optional sprinkling of banana chips or walnut pieces.
